Solar Salt

Solar Salt is the Korean term referring to unrefined sea salt extracted naturally from the sea with sunlight and wind.Sea water is filled into water retentions and concentrated naturally. Most salt comes from the coastal areas of the Caribbean or the Red Seas, but the sea salt Solar Salt produced in Korea usually comes from the East Sea and West Sea. Salinity levels and color varies according to each production area’s environment. Normally sea salt is usually clear or white in color, and the salinity is usually about 90 percent. However, Korea’s Solar Salt is pure white 80 percent salinity.

Halite

Commonly known as rock slat it is extracted from layers from underground formed isometric crystal.Halite is abundant especially in the United States, England, Germany, and Russia. Hallite is mined from these areas, crushed and selected, and packaged for industrial and edible purposes. The salinity level is more than 96 percent and is colorless. However, according to where the halite was formed the crystals may turn into gray, brown, red, or blue colors.

Machine Produced Salt

Also known as refined salt, it is made by filtering sea water through machines and decompose the Na+ and Cl- ions by electrolysis Then the substance is concentrated and moisture is evaporated until the water level is at 0.01 percent to produce salt. Sodium chloride level is more than 99 percent of the salt, and magnesium is eliminated during the process so it holds less moisture and the color is whiter than other types of salt.

Recrystallized Salt

Also referred to as kosher salt, the salt is remanufactured, or recrystallized after the dissolution, dehydration, and evaporation. It is normally produced by heating together 20 percent of Solar Salt and 80 percent of imported salt in 115℃ for more than 18 hours. Salinity level is over 90 percent.

Fortified Table Salt

Fortified Table Salt contains additives to raw salt that has been baked, burned, and melted once to change the form of the original salt crystals. According to the Korean Food Standards Codex, cleansing, grinding, and compressing are not methods of fortification for salt.
